So far I have =IF(E3
BUT it will not accept that A* is better than A.
Any ideas?

It is acceoting that A* is better than A but is not accepting that A* is bette than G. Try this
1.
create a two column table with grades in one column and numbers in the other. So in J3:J10, enter A*, A, B, C, D, E, F and G. In K3:K10, enter 7,6,5,4,3,2,1,0

Your formula would then become
-IF(VLOOKUP(E3,$J$3:$K$10,2,0)
